It's a matter of personal preference - I always used to set up one for each machine, now I never bother!
Also, if you're running CPU and GPU for the same coin you're effectively using the same worker twice…

What is the actual purpose then to have the ability of setting up multiple workers in a pool since in fact it doesn't bring any additional benefit in terms of mining?
