To clarify, my Zeus and Gridseed are running under the BFGminer window in MacMiner... I never could get cgminer to recognise the Zeus properly, even running in terminal.

Note: even though I have --force-device-init, the zus doesn't seem to restart unless I set --hotplug 30 - the zeus seems to take a while to reinitialize after MacMiner does it's automatic restart…
Use the flag --log 5 or -l 5 (lowercase L) which sends a 5 second log summary, and the data will show in the window head... not sure why the default 20 second summary wont work, but it's fixable and an easy workaround.
Check to make sure you are not behind a firewall, this includes any software firewalls or net monitors on your Mac "Little Snitch?" ... BFG tends to get touchy when it can't reach out and touch someone.
Have you tried booting the 64bit EFI? Apple locks Snow Leopard into 32bit mode for device compatability on some hardware but 64bit app code should work just fine.
