hi Mr. Panda, so sorry to bother you again.
When I run xmr-stak-amd my mac becomes a square potato. No, a square turnip. It takes almost 5 minutes to terminate the program.
what should I run/input to have xmr-stak-amd use less of my gpu power?

GPU mining impacts a lot more on the system usability than CPU mining and this is to be expected on a lot of set ups, I set the intensity in the supplied config file very low so if your system is totally unusable with these settings it's probably not going to get better for you and still be worthwhile mining. However if you do wish to you can decrease intensity to a lower multiple of 8 and that might help.
